Sage Smoked White Chocolate Mousse

1.   Scald the 1/4 cup of cream and pour it over the chopped chocolate.  Mix until the chocolate is melted.  Set aside.

2.   Bloom the gelatin in the water.

3.  Scald the milk.  Mix togeher the yolks and the sugar, then temper them into the milk.  Cook to thicken slightly.

4.  Mix in the gelatin, stirring until totally dissolved.

5.  Wait ten minutes and then mix in the chocolate.  Transfer to a bowl and cool to room temperature.

6.  While you’re waiting, whip the remaining 1 cup cream to soft peaks.

7.  Fold the whipped cream into the cooled  custard.  Pour the mousse into a prepared vessel.

8.  Chill at least 2 hours before serving

*to smoke the chocolate, soak 6 oz sage in water for 20 minutes.  Drain the herbs and get them screaming hot (smoking) in a cast-iron skillet.  Place the smoking herbs and the chopped white chocolate into your smoking vessel and smoke for 20 minutes.  Proceed with recipe.
