Oh. Hells. Yes.
Outside of grilling (which is impossible to do in my shoebox of an apartment), this is my absolute favorite way to do a steak.
Of course, I don’t have as many BTUs as that nice burner I see there, but hey, cast iron is the bomb.
Sear ‘em, then finish ‘em in the oven. Bleu Butter ‘em while they’re resting.
