This not the greatest blog in the world…

This is just a tribute to it’s creator, Jaybill.  Without his technical expertise and understanding patience, mrjeffmccarthy.com would just be a big pile of cyber-wishes.  So thanks brother, for helping me get this site off the ground, it has been a huge source of entertainment as well as an alleviation of boredom during a hard time.   I don’t think I’ll be winning any Photoshop contests with this one,  but at least Jaybill is one step closer to his life-long dream of being black.   You can check out real pictures of my friends and family in my new photo gallery, called Cool People


Fries With One Hand

If I can make a custard with one arm, then I can make bread pudding.  If I can make bread pudding, then I can deep fry it.  Jaybill came up with idea as a joke, but I really liked the idea of taking old croissants, soaking them in custard, baking them in a waterbath, breading them with panko, and then deep frying them.  Anyway here’s Panko-Fried Chocolate Bread Pudding.  PFBP for short.  Check out how to make it in my new Recipes section.


Dogs Rule.

l_3e78b450641d2a6a38045999f0419c8b.jpgThis is Oscar.  He lives in Colorado with his owner Jay, and little sister Ginger.  This picture makes me laugh out loud everytime I look at it.  Thousands of books have been written about the awesome nature of dogs.  personally I can sum it up like this:  A dog is the one animal I probably wouldn’t eat.  You can check out pics of my dogs, Jelly and Jam, in my new photos section, recently built by Jaybill.


The Cave

There’s nothing  to do when you get hurt but crack a beer, take some drugs, go into the cave and pop in Goonies.  The cave is where you pull the shades, shut the lights, turn off your phone. and stay there till the next day. You might also go to the cave with a really bad hangover.   Its also where One Eyed Willy hangs out, in his boat, waiting for YOU to come and steal his treasure.


Radial Head Fracture

Ouch…I think the quote of the day was by my Dad “Well you used to bend, but now you snap!”   Two broken bones in as many years…from skateboarding! I’m getting old!  In the McCarthy tradition I took this photo in the ER, and it actually looks semi normal compared to how it looked right when I injured it.  The” ’s’ deformation” it had right when it broke was a bit much for me to look at…so I straightened it.  This will definitely require surgery.  I’ll be outta commission for awhile I guess. 


Butter Poaching

Here is a couple of pork loins that Jaybill and I butter poached.  We used an infused clarified butter to poach, and then seared them on a hot griddle.  The infusion of shallots, sage, peppercorns, garlic and bayleaf imparted such a great flavor to the butter during clarification that we have been using as much as possible over the last week.  Roux, garlic bread,  pate choux,  poached eggs, yum yum yum yum yum.  I can hear my fat…it says…butter poach bacon.


Blog’Dib

250px-sheeanaandworm.jpgInternet…I know its ways.  Like a giant sandworm it rose from hell, and I mounted the great Shai Halud, and it bore me to the far reaches of Uranus.  But seriously folks, I’ve really taken to this blogging thing.  If anyone out there is really reading this, thank you.


Food Porn

No, this isn’t about the thing with the butter and the guniea pig, so dont get excited.  Sometimes when I look at food being prepared or served I think: That is Food Porn.  Seeing a pig rotate slowly rotate over a hot fire, watching someone fold whip cream into eggs and choclolate, a case of red peppers cut up into a perfect julienne, are all great examples. This pig spun over hot coals for 27 hours.  Then I ate an eyeball.


Old Blue

Old Blue is my 30, 000 BTU candy stove. It has many great uses.  It rules.

So we were sitting in the bar, and a young woman entered and remarked, ”Oh you get to taste your own food?” Chef turns, with all three of us sitting in whites and says   “Of course.”  I was reminded of how important it is, as a chef, to taste your food!  We were sitting at the bar of course because today was my tasting at the restaurant with Chef Pascal.  It went extremely well.  The Funnel Cakes, pictured here in the  final presentation, looked beautiful.  I only wish Keri was there to take the picture.
